Keto Meatloaf Minis Ingredients: 1 lb Ground Beef 1 Cup Chopped Onion 1 Egg 1 Cup Pork Bread Crumb Substitute 1/4 Teaspoon Onion Powder 1/4 Teaspoon Garlic Powder 1/4 Teaspoon Italian Seasoning 1/4 Teaspoon Salt 1/4 Teaspoon Black pepper 5 1/2 Tablespoons Ketchup Instructions Preheat oven to 350 F and grease a muffin pan In a bowl combine ground beef, chopped onion, egg, pork panko, onion powder, garlic powder, Italian seasoning, salt, pepper and knead together until well combined. Shape 1/4 cup of mixture into a puck shape and place into muffin pan. Cilantro Jalapeno Tuna Cakes Ingredients 2 5-7 oz each cans of tuna in water or oil, drained well 1 egg 1/2 cup cilantro minced 1/4 onion diced 1/4 cup nonfat Greek yogurt or mayo 1/4 cup almond flour or breadcrumbs 1 jalapeño deseeded (optional) and diced juice of 1/2 lemon or lime 1/2 teaspoon garlic powder optional 1/2 teaspoon cumin optional salt and pepper to taste 2 tablespoon extra virgin olive oil For the sriracha aioli 1/2 cup nonfat Greek yogurt or mayo 2 tablespoons sriracha Juice of 1/2 lime Instructions To a large bowl add the drained tuna, egg, cilantro, onion, yogurt or mayo, almond flour, jalapeno, lemon or lime juice, garlic powder, cumin, and a generous sprinkle of salt and pepper. Mix with a fork until fully combined. Shape mixture into 6-8 patties. Heat oil in a skillet over medium heat; fry patties until golden brown, about 5 minutes per side. Serve with a side of avocado salad, in a sandwich, on a bed of greens or with a side of veggies. Drizzle with sriracha aioli if desired. To make sriracha aioli: whisk Greek yogurt or mayo, sriracha, and lime juice until combined. Garlic Cheesy Bread Chaffle Sticks Ingredients 1 medium egg 1/2 cup mozzarella cheese grated 2 tablespoons almond flour 1/2 teaspoon garlic powder 1/2 teaspoon oregano 1/2 teaspoon salt TOPPING 2 tablespoons butter, unsalted softened 1/2 teaspoon garlic powder 1/4 cup mozzarella cheese grated Instructions Turn on your waffle maker and lightly grease it (I give it a light spray with olive oil) In a bowl, beat the egg. Add the mozzarella, almond flour, garlic powder, oregano and salt and mix well. Spoon the batter into your waffle maker. I spoon my mixture into the center of my waffle maker and gently spread it out towards the edges. Close the lid and cook for 5 minutes. Using tongs, remove the cooked waffles and cut into 4 strips for each waffle. Place the sticks on a tray and pre-heat the oven on broil (I use the toaster oven). Mix the butter with the garlic powder and spread over the sticks. Sprinkle the mozzarella over the sticks and place in oven for 2-3 minutes until the cheese has melted and bubbling. Eat immediately!
